
As the final days of summer are upon us and the final tomatoes have come off the vine, I wanted to find some creative uses for all the green tomatoes we had left over and I came across this recipe. My skeptical husband LOVED it! It tasted a bit like an apple cobbler with a bite. You can also try it with a "crisp" topping (brown sugar, flour, butter & oatmeal).
GREEN TOMATO COBBLER
Preheat oven to 375 F (gas mark 5)
4 cups (about 750 grams) chopped green tomatoes
1 cup (200 grams) white sugar
1/4 cup (35 grams) flour ((type 65 for you in France)
1 teaspoon (10 grams) cinnamon
1 1/2 (20 ml) tablespoons vinegar
Combine tomatoes, sugar, flour, cinnamon & vinegar in a bowl and put in 8" (20 cm) pie plate or 8"x8" baking dish.
For the crumble topping: Mix together the following ingredients with a pastry cutter or fingers until crumbly:
1/2 cup (65 grams) flour
1/2 cup (100 grams) sugar
1/2 cup (110 grams) butter, room temperature
Sprinkle crumble topping over fruit mixture and bake for about 35 or 40 minutes (or until lightly brown).
